Summer lamb meatloaf

MacMan has been asking me to make meatloaf for ages. This is a bit fancier than your bog standard Simpsons meatloaf, as it's made with lamb mince rather than the much cheaper beef mince. The extra cost is so worth it though, as this was very tasty, and complimented by everyone. I served it with the roasted kumara dish (see below).

Summer lamb meatloaf
Serves 4

500g lamb mince
1 small onion, peeled and chopped
3 cloves garlic, crushed
1 tbsp olive oil
1/4 cup tomato paste
75g bacon, chopped
1/4 cup fresh breadcrumbs
1 egg
1 tsp salt
1 tsp pepper
1/2 tbsp chopped fresh herbs
juice and zest 1 lemon
3 extra slices bacon
  • Preheat oven to 200C.
  • Mix all ingredients together (except extra bacon) until well blended.
  • Shape into long loaf. Wrap with bacon slices.
  • Place in an oiled oven pan. Bake for 50-60 minutes.
  • Serve hot or cold, cut into slices.

mmm! lovely - but a bit salty. I stupidly added salt as per the recipie but there was more than enough from the bacon and I also used a lot more than specified. We had it hot (seeing as its not summer here) but I'm looking forward to the cold leftovers for lunch! Never made a meatloaf before so thanks for the inspiration!

I never add salt to cooking! This used to annoy MacMan immensely, but he rarely even adds table salt these days.
Glad you enjoyed it - bar the salt!
