Nachos

We find this a fun way to serve mince. I tend to batch cook mince, and freeze it in family meal sized portions. The cooked mince can then be easily adapted to cottage pie, lasagne, chilli etc etc. I find that mince is so much nicer if left onto simmer for an hour or two, and does really nicely in a slow cooker. This recipe is just a suggestion really, as you can add or leave ingredients according to preference.

Mince
Serves 4

500g minced beef
Onion, finely chopped
Carrot, grated
Sun dried tomatoes
Sliced sweet peppers/capsicum
Tin tomatoes
Glass red wine

  • Brown the mince in a non stick pan.
  • Add the remaining ingredients, and bring to the boil. Turn down the heat, and simmer for at least an hour.

Nachos

Large bag corn chips
Various toppings such as:
Sour cream
Guacamole
Grated Cheese
Sliced jalapeno peppers

  • Arrange the corn chips on the plate. Top with a serving of the mince mixture.
  • Serve with your choice of toppings.

Very simple, but always a hit.
